A quick and easy 5-minute overnight oats recipe with creamy peanut butter, ripe banana, and Greek yogurt. Perfect for busy mornings, this make-ahead breakfast is naturally sweet, satisfying, and endlessly customizable.

  • 1/2 cup rolled oats (old-fashioned)
  • 1/2 cup milk of your choice (whole, oat, almond, etc.)
  • 1/4 cup plain Greek yogurt (full-fat or 2%)
  • 1 ripe banana (half mashed, half sliced for topping)
  • 2 tablespoons creamy peanut butter (plus extra for swirling)
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon chia seeds (optional)
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash half of the ripe banana with a fork until mostly smooth. Slice the remaining half and set aside for topping.
  2. In a small bowl or directly in a mason jar, combine the mashed banana, milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Whisk until the peanut butter is mostly incorporated.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until all oats are coated.
  4. Transfer the mixture to a mason jar or airtight container, leaving about an inch of space at the top.
  5. Optionally, add an extra tablespoon of peanut butter on top and gently swirl it in with a knife.
  6. Seal the jar and refrigerate for at least 6 hours or overnight.
  7. In the morning, stir the oats. If too thick, add a splash of milk. Top with reserved banana slices, a drizzle of peanut butter, and any other desired toppings.

Notes

For best texture, use rolled oats (not quick or steel-cut). Mash half the banana for natural sweetness and creaminess. The oats keep in the fridge for up to 5 days. To serve warm, microwave for 45-60 seconds. For a vegan version, use plant-based milk and dairy-free yogurt.
