  • ½ cup (50g) rolled oats
  • ½ cup (120ml) unsweetened almond milk
  • ¼ cup (60g) plain Greek yogurt
  • 1 medium ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (15g) chia seeds (optional)
  • For the topping (optional): sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, flaky sea salt

Instructions

  1. Mash the banana: In a small bowl, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Combine the wet ingredients: In a mason jar or container, add the mashed banana, almond milk, Greek yogurt, and peanut butter. Stir until smooth and creamy.
  3. Add the dry ingredients: Pour in the rolled oats, vanilla protein powder, and chia seeds (if using). Stir until no dry clumps remain.
  4. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 8 hours or overnight.
  5. Stir and serve: In the morning, stir the oats. If too thick, add a splash of milk.
  6. Add toppings: Top with sliced banana, peanut butter drizzle, chocolate chips, chopped peanuts, and flaky sea salt.

Notes

Use a very ripe banana for natural sweetness. If using plant-based protein powder, add an extra splash of milk as it absorbs more liquid. For a thicker texture, add an extra tablespoon of chia seeds. The oats keep in the fridge for up to 5 days and can be frozen for up to 3 months.
