  • 4 boneless, skinless chicken breasts (about 6 ounces / 170 grams each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 cup chopped sun-dried tomatoes (oil-packed preferred)
  • 1 cup chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful of fresh basil leaves, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and freshly ground black pepper. (5 minutes)
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Transfer to a plate and tent with foil. (10 minutes)
  3. Lower heat to medium and add minced garlic to the skillet. Stir for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1-2 minutes. (3 minutes)
  4. Pour in 1 cup chicken broth, scraping up browned bits from the pan. Add dried Italian herbs and red pepper flakes if using. Simmer gently for 5 minutes to reduce slightly. (5 minutes)
  5. Stir in 3/4 cup heavy cream and 1/3 cup freshly grated Parmesan cheese. Cook and stir until sauce thickens and becomes silky, about 3-4 minutes. Adjust seasoning with salt and pepper if needed. (5 minutes)
  6. Return the chicken breasts to the pan, nestle them into the sauce, spoon sauce over the top, cover, and cook on low heat for another 5 minutes to meld flavors and keep chicken tender. (5 minutes)
  7. Remove from heat, sprinkle chopped fresh basil over the top, and serve immediately.

Notes

If sauce is too thick, loosen with a splash of chicken broth or cream. If too thin, simmer uncovered longer. Avoid overcrowding the pan to get a good sear on chicken. Use freshly grated Parmesan for best texture. Cover pan during final simmer to keep chicken juicy. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
