  • 1 medium red onion
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt, plus more for salting cucumbers
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Wash and dry the cucumbers. Slice them thinly into rounds about ⅛-inch thick.
  2. Place the sliced cucumbers in a colander set over a bowl or in the sink. Sprinkle with about 1 teaspoon of salt and toss gently. Let sit for 15-20 minutes to draw out excess moisture.
  3. While cucumbers rest, peel and thinly slice the red onion. If sensitive to raw onion flavor, soak slices in ice water for 10 minutes, then drain and pat dry.
  4. In a small bowl, whisk together sour cream, mayonnaise, white vinegar, sugar, remaining salt, and black pepper until smooth. Stir in chopped fresh dill.
  5. After 15-20 minutes, pat the cucumber slices dry with a clean kitchen towel or paper towels to remove surface moisture.
  6. In a large mixing bowl, combine dried cucumber slices and sliced red onion. Pour dressing over top and toss gently until evenly coated.
  7. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  8. Give a final stir before serving. Garnish with extra fresh dill and serve cold or at room temperature.

Salting the cucumbers is crucial to prevent a watery dressing. For best flavor, let the salad rest in the fridge for at least 30 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze.
