A quick, hearty, and creamy turkey chili featuring sweet potatoes, black beans, and chipotle peppers in adobo sauce, finished with rich coconut milk for a comforting weeknight meal.

  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 lb 93% lean ground turkey
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (plus more to taste)
  • Black pepper to taste
  • 2 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce
  • 2 medium sweet potatoes, peeled and diced into half-inch cubes
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1 (32-ounce) carton low-sodium chicken or vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add diced onion and a pinch of salt; cook until translucent and soft, about 4 minutes.
  2. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
  3. Add ground turkey to the pot, breaking it up with a wooden spoon. Cook until no longer pink, about 5 minutes. Drain excess fat if necessary.
  4. Reduce heat to medium. Add cumin, chili powder, smoked paprika, salt, and black pepper. Stir constantly for 1 minute to bloom the spices.
  5. Stir in minced chipotle peppers and adobo sauce. Add diced sweet potatoes, chickpeas, black beans, coconut milk, and broth. Stir to combine.
  6. Bring the mixture to a boil, then reduce heat to low. Cover with a lid slightly ajar and simmer for 15-20 minutes until sweet potatoes are fork-tender.
  7. Taste and adjust seasoning with salt or more adobo sauce if desired.
  8. Remove from heat and let sit for 5 minutes to allow flavors to meld and chili to thicken.
  9. Ladle into bowls and serve with desired garnishes such as avocado, cilantro, or sour cream.

Notes

For best texture, use full-fat coconut milk. If the chili is too thin, simmer uncovered for an extra 5-10 minutes. If too spicy, add a teaspoon of sugar or more coconut milk. This recipe can be adapted for slow cooker (cook on low 6-8 hours) or Instant Pot (High Pressure 10 minutes).
