  • ½ cup (45g) rolled oats (old-fashioned preferred)
  • ½ cup (120ml) milk of choice (whole, almond, oat, or soy milk)
  • ¼ cup (60g) plain Greek yogurt (dairy-free alternative optional)
  • 2 tablespoons (30g) cream cheese, softened
  • 1 medium apple, peeled and diced (Fuji or Honeycrisp recommended)
  • 2 tablespoons (30ml) caramel sauce (store-bought or homemade)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey (optional)
  • 2 tablespoons chopped walnuts or pecans (optional)
  • Pinch of salt

Instructions

  1. In a small skillet over medium heat, sauté the diced apple with ½ teaspoon ground cinnamon and about 1 tablespoon water for 4 to 5 minutes until just tender but still holding shape. Remove from heat and let cool slightly.
  2. In a medium bowl, whisk together softened cream cheese and vanilla extract until smooth.
  3. Stir in Greek yogurt, milk of choice, maple syrup or honey (if using), and a pinch of salt until well combined and creamy.
  4. Add rolled oats and 1 tablespoon caramel sauce, stirring to coat oats evenly.
  5. Fold in the cooled sautéed apples, reserving a few pieces for topping if desired.
  6. Transfer mixture to a lidded jar or container and refrigerate for at least 6 hours or overnight.
  7. In the morning, stir the oats well. Add more caramel sauce on top if desired and sprinkle with chopped nuts before serving.

Notes

Use old-fashioned rolled oats for best texture; quick oats get mushy and steel-cut oats don’t soften enough overnight. Soften apples gently to keep shape and add warmth. Keep cream cheese at room temperature to avoid lumps. Stir oats in the morning to redistribute flavors. Add nuts just before serving for crunch. For vegan/dairy-free, substitute cream cheese and Greek yogurt with coconut cream or nut-based alternatives and use plant-based milk and vegan caramel sauce.
