Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge at least 30 minutes before starting. If in a hurry, cut into cubes and microwave for 10-15 seconds until soft but not warm or melted.
  2. Beat the cream cheese: Place softened cream cheese in a mixing bowl. Beat on medium speed for about 2 minutes until completely smooth with no lumps. Scrape down sides of bowl halfway through.
  3. Add brown sugar and vanilla: Pour in brown sugar and vanilla extract. Beat on medium speed for another minute until well combined. Mixture will look thick and slightly grainy.
  4. Pour in heavy cream: With mixer running on low, slowly drizzle in heavy cream. Increase speed to medium-high and beat for 2-3 minutes until mixture turns pale, fluffy, and holds soft peaks.
  5. Add pinch of salt: Sprinkle in salt and mix on low just until incorporated. Taste and adjust salt if needed.
  6. Chill the dip (optional but recommended): Cover bowl and refrigerate for 20-30 minutes to firm up texture and meld flavors.
  7. Prepare apples and toppings: While dip chills, slice apples into thin wedges (about 1/4 inch thick). Toss with lemon juice to prevent browning if desired. Warm caramel sauce for about 15 seconds in microwave until pourable.
  8. Assemble and serve: Transfer chilled dip to serving bowl. Smooth top with spatula. Drizzle warm caramel sauce over top in swoops and swirls. Sprinkle with chopped nuts if using. Arrange apple slices around bowl and serve immediately.

Notes

For best texture, use full-fat cream cheese and let it come to room temperature. Don’t overbeat once cream is added to avoid graininess. Warm caramel sauce just enough to be pourable, not hot.
