  • ¼ teaspoon black pepper
  • 23 tablespoons green onions, thinly sliced (for garnish)
  • 1 large bag tortilla chips (for serving)

Instructions

  1. Take cream cheese out of the refrigerator at least 30 minutes before cooking to soften. Shred chicken using two forks or your hands. Measure out hot sauce, cheeses, and seasonings.
  2. Place a large skillet over medium heat and let it warm for about 2 minutes.
  3. Add softened cream cheese to the hot skillet. Break it up with a spatula and stir continuously for 2-3 minutes until smooth and glossy.
  4. Pour in buffalo hot sauce and stir for about 1 minute until the mixture is uniform and pale orange.
  5. Sprinkle in ranch dressing mix, garlic powder, onion powder, salt, and pepper. Stir for about 30 seconds until fully incorporated.
  6. Add shredded chicken to the skillet. Fold into the sauce until every piece is coated, about 2 minutes.
  7. Reduce heat to low. Sprinkle cheddar and Monterey Jack over the chicken mixture. Let sit for 30 seconds, then fold gently until cheese is melted and dip is smooth and bubbling, about 2-3 minutes.
  8. Remove from heat. Garnish with sliced green onions. Transfer to a serving bowl or serve directly from the skillet. Arrange tortilla chips around the bowl and serve immediately.

Notes

For best results, use room temperature cream cheese and freshly shredded cheese. Keep heat on medium-low to prevent dairy from separating.
