Cozy Tuscan White Bean and Kale Soup with Parmesan Rind

A warm, hearty Tuscan-inspired soup featuring white beans, kale, and a Parmesan rind for rich umami flavor. Perfect for busy weeknights, this soup is simple, nutritious, and comforting.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 4 cups packed kale leaves (about 120 g), stems removed and chopped
  • 6 cups vegetable broth (homemade or low-sodium store-bought)
  • 1 piece Parmesan rind (about 23 inches)
  • 2 teaspoons fresh thyme, finely chopped
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • Juice of half a lemon
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat 2 tablespoons of extra virgin olive oil in a large heavy-bottomed pot over medium heat until shimmering but not smoking (about 1-2 minutes).
  2. Add chopped onion, diced carrots, and celery. Sauté for 6-8 minutes, stirring occasionally, until vegetables are softened and onion is translucent.
  3. Stir in minced garlic and thyme; cook for 1-2 minutes until fragrant but not browned.
  4. Pour in 6 cups vegetable broth and add the Parmesan rind. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 15 minutes to infuse flavor.
  5. While broth simmers, remove kale stems and chop leaves into bite-sized pieces; wash thoroughly.
  6. Add drained white beans and chopped kale to the pot. Continue simmering for 10-12 minutes until kale is tender but still bright green.
  7. Remove Parmesan rind. Season soup with salt, pepper, and optional red pepper flakes to taste.
  8. Just before serving, squeeze in fresh lemon juice to brighten flavors.
  9. Ladle soup into bowls and top with grated Parmesan cheese if desired.

Notes

Do not rush sautéing the soffritto (onion, carrots, celery) to build flavor. Simmer Parmesan rind long enough to release umami but not so long it clouds broth. Rinsed canned beans help maintain creamy texture without mushiness. Remove kale stems to avoid woody chewiness. Season gradually as broth and rind add saltiness. Simmer gently to develop flavor and texture. If soup is too thick, add broth or water to loosen. Reheat leftovers gently to keep kale tender.
