  • 1/2 cup (113g) unsalted butter, softened
  • 3/4 cup (150g) packed brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 cup (240g) pure pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (270g) semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat the softened butter with brown sugar and granulated sugar until light and fluffy, about 3 minutes.
  4. Beat in the egg, then mix in the pumpkin puree and vanilla extract until smooth and glossy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on the prepared baking sheets.
  8. Bake for 12-14 minutes until edges are set but centers look slightly soft. Avoid overbaking.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use pure pumpkin puree, not pumpkin pie filling. For softer cookies, do not overbake and consider chilling dough for 20 minutes if cookies spread too much. Store cookies in an airtight container with a slice of bread to maintain moisture. Variations include gluten-free flour blends, vegan substitutions, and adding nuts or different mix-ins.
