A simple, hearty, and smoky soup made with smoked kielbasa, white beans, and aromatic herbs. This ‘set it and forget it’ meal is perfect for cold weather and busy weeknights, requiring minimal prep time.

  • 1 pound smoked kielbasa, sliced into half-moons
  • 4 cups low-sodium chicken or vegetable broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes
  • ½ cup heavy cream or half-and-half (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Slice the kielbasa into half-moon slices (about ¼ inch thick). Dice the onion and mince the garlic.
  2. Pour the chicken broth into the bottom of the slow cooker insert to prevent burning.
  3. Add the diced onion, minced garlic, sliced kielbasa, drained white beans, and drained diced tomatoes to the slow cooker.
  4. Sprinkle the Italian seasoning and red pepper flakes over the ingredients.
  5. Cover and cook on LOW for 6 to 8 hours (or HIGH for 3 to 4 hours).
  6. About 30 minutes before serving, stir in the heavy cream or half-and-half.
  7. Taste the soup and add salt and black pepper if needed.
  8. Garnish with fresh parsley and serve hot with crusty bread.

Notes

Use low-sodium broth as kielbasa is naturally salty. If the soup is too thin, mash some beans against the side of the pot. If too salty, add a diced potato for 30 minutes to absorb salt. For extra flavor, brown the sausage in a skillet before adding to the slow cooker. Add cream only in the last 30 minutes to prevent curdling.
