A quick and easy comfort food soup that recreates the creamy, hearty taste of Panera Bread’s Chicken and Wild Rice Soup using simple ingredients and a classic roux technique.

Ingredients

  • 2 tablespoons unsalted butter
  • 1 yellow onion, finely diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, finely chopped
  • 2 tablespoons all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 cup wild rice blend (including brown and white rice)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 2 cups shredded rotisserie chicken
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Peel and dice the carrots, chop the celery, and dice the onion.
  2. Melt butter in a large pot over medium heat. Add onions, carrots, and celery. Sauté for 5 minutes until onions are translucent.
  3. Sprinkle flour over the vegetables and stir constantly for 1-2 minutes to form a roux.
  4. Slowly pour in chicken broth while stirring to prevent lumps. Add wild rice, bay leaf, and thyme.
  5. Bring to a boil, then reduce heat to low. Cover partially and simmer for 20 minutes until rice is tender.
  6. Stir in shredded chicken and heavy cream. Heat through for 2-3 minutes.
  7. Remove bay leaf, season with salt and pepper, and garnish with fresh parsley before serving.

Notes

For a gluten-free version, use a gluten-free flour blend or cornstarch. For dairy-free, swap butter for olive oil and heavy cream for coconut milk or oat cream. If the soup is too thick, add more broth. If too thin, simmer uncovered to reduce.
