Instructions

  1. Pat dry about 2 pounds of boneless, skinless chicken breasts with paper towels and place evenly in the crockpot insert.
  2. In a medium bowl, combine 1 packet onion soup mix, 1 can cream of mushroom soup, 2 cups chicken broth, and 2 minced garlic cloves. Whisk until smooth to form the gravy base.
  3. Pour the gravy mixture evenly over the chicken in the crockpot, ensuring the chicken is mostly submerged but not swimming.
  4. Cover and cook on low for 7-8 hours overnight. Alternatively, cook on high for 3-4 hours if short on time.
  5. About 30 minutes before serving, prepare 4 servings of mashed potatoes (instant or homemade).
  6. Carefully remove the chicken and keep warm. Pour the crockpot liquid into a saucepan over medium heat.
  7. Melt 2 tablespoons unsalted butter in the saucepan, whisk in 2 tablespoons flour, and cook for about 2 minutes to make a roux.
  8. Slowly whisk in the crockpot liquid and simmer until thickened, about 5 minutes. Season with salt and pepper to taste.
  9. For extra creaminess, stir in a splash of heavy cream if desired.
  10. Slice or shred the chicken, serve over mashed potatoes, and ladle the rich gravy on top.
