Instructions

  1. Brown the Butter: In a small saucepan, melt 1/2 cup (113g) unsalted butter over medium heat. Stir frequently until it foams and turns golden brown with nutty aromas (about 5-7 minutes). Remove from heat and let cool slightly.
  2. Preheat Oven and Prepare Pan: Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  3. Mash Bananas: In a large mixing bowl, mash 3 ripe bananas until mostly smooth but still a little chunky.
  4. Mix Wet Ingredients: Add the browned butter, 1/4 cup (85g) honey, 1/2 cup (100g) granulated sugar, 1/4 cup (50g) brown sugar, and 2 large eggs. Stir until combined and glossy.
  5. Add Dry Ingredients: Sprinkle in 1 3/4 cups (220g) all-purpose flour, 1 tsp baking soda, 1/2 tsp salt, and 1 tsp ground cinnamon. Fold gently until just combined.
  6. Fold in Walnuts: Gently stir in 1/2 cup (60g) toasted chopped walnuts.
  7. Pour and Bake: Pour batter into prepared loaf pan and smooth the top. Bake for 55-65 minutes or until a toothpick inserted near the center comes out clean or with a few moist crumbs.
  8. Cool and Drizzle: Let bread cool in pan for 15 minutes, then transfer to a wire rack. While warm, drizzle with extra honey.
