  • 1 tablespoon fresh lemon juice
  • 1 cup all-purpose flour (120g)
  • 1/2 cup packed dark brown sugar (100g)
  • 1/2 cup cold unsalted butter, cubed (115g)
  • 3/4 cup old-fashioned rolled oats (75g)
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Prepare the peaches by peeling (optional) and slicing into 1/4-inch thick wedges. Toss sliced peaches with granulated sugar and lemon juice in a large bowl. Let macerate for about 10 minutes.
  2. In another bowl, combine flour, brown sugar, rolled oats, cinnamon, and salt. Add cold cubed butter and use a pastry cutter or fingertips to mix until crumbly with pea-sized butter bits.
  3. Preheat oven to 350°F (175°C). Pour peach mixture with juices into a 9×9-inch baking dish and spread evenly.
  4. Sprinkle the streusel topping evenly over the peaches.
  5. Bake for 35-40 minutes until peach juices bubble and topping is golden brown. Tent with foil if topping browns too quickly.
  6. Let cool for 10-15 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.
