Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with butter or nonstick spray.
  2. In a large bowl, toss the sliced peaches with granulated sugar, brown sugar, vanilla extract, cinnamon, lemon juice, cornstarch, and a pinch of salt until well coated.
  3. Transfer the peach mixture into the prepared baking dish and spread evenly.
  4. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  5. Add cold, cubed butter to the dry ingredients and cut in with a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized butter pieces.
