Instructions

  1. Peel and slice about 6 medium-sized ripe peaches into roughly ½-inch thick slices. Toss them gently in a large bowl with ½ cup packed brown sugar, ¼ cup granulated sugar, 1 tablespoon fresh lemon juice, and 1 teaspoon ground cinnamon. Let sit for 10-15 minutes to macerate.
  2. Preheat oven to 375°F (190°C).
  3. In a medium bowl, whisk together 1 cup plus 2 tablespoons all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Add 6 tablespoons cold, cubed unsalted butter and cut into the flour until mixture resembles coarse crumbs with pea-size bits of butter.
  4. Stir ¾ cup milk and 1 teaspoon vanilla extract into the flour mixture. Mix gently just until combined; do not overmix.
  5. Pour the peach mixture, including juices, into a 9×9-inch baking dish. Drop spoonfuls of the biscuit batter evenly over the peaches.
  6. Bake for 35-40 minutes until the biscuit topping is puffed and golden brown and peach juices are bubbly. Tent with foil if topping browns too quickly.
