A quick, kid-friendly egg salad sandwich shaped like a dinosaur, perfect for lunchboxes and picky eaters. Creamy, comforting, and fun to make with simple ingredients.

  • 1/3 cup (80 ml) mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup (30 g) celery, finely chopped
  • 1 tbsp green onion, thinly sliced (optional)
  • 1 tbsp fresh parsley, chopped (can substitute dill or chives)
  • Salt and pepper to taste
  • 6 slices soft sandwich bread (white, whole wheat, or gluten-free)
  • Butter or olive oil for light toasting (optional)
  • Carrot sticks, cherry tomatoes, or grapes for bento box sides

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about 1 inch (2.5 cm). Bring to a rolling boil over medium-high heat.
  2. Once boiling, cover the pot, turn off the heat, and let sit for 10-12 minutes to achieve tender whites and creamy yolks.
  3. Transfer eggs to a bowl of ice water immediately to stop cooking and make peeling easier. Let sit for 5 minutes, then gently peel off shells.
  4. Roughly chop the peeled eggs on a cutting board. Transfer to a mixing bowl and mash with a fork to slightly chunky texture.
  5. Add mayonnaise, Dijon mustard, finely chopped celery, green onion, parsley, salt, and pepper. Stir gently to combine until creamy but not runny.
  6. Optionally, lightly toast bread slices with butter or olive oil for extra flavor and sturdiness. Let cool completely before assembling.
  7. Spread a generous layer of egg salad on 3 slices of bread. Top with remaining slices, pressing gently.
  8. Use a dinosaur-shaped sandwich cutter to cut out fun sandwiches. Chill sandwiches for 10 minutes if bread compresses or tears.
  9. Place dinosaur sandwiches in the main compartment of a bento box. Fill side compartments with carrot sticks, cherry tomatoes, or grapes.
  10. Cover the bento box tightly and refrigerate if not serving immediately to keep fresh until lunchtime.

Notes

Use the off-heat steeping method for boiling eggs to avoid rubbery texture. Chill sandwiches before cutting to maintain shape. Substitute celery with cucumber or grated carrot if preferred.
