  • 2 cups (250g) all-purpose flour (can swap half with whole wheat)
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs, room temperature
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 1/2 cup (120ml) vegetable oil or melted butter
  • 1/4 cup (60ml) plain yogurt or sour cream
  • 1 teaspoon vanilla extract
  • 2 cups (about 2 medium) zucchini, grated and squeezed dry
  • 1 cup (175g) semi-sweet chocolate chips
  • For the brown sugar cinnamon swirl:
  • 1/3 cup (70g) packed brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Grate 2 medium zucchinis (about 2 cups) using a box grater or food processor. Wrap the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. Set aside.
  2. Preheat oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan or line it with parchment paper.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, and ground cinnamon.
  4. In another bowl, beat eggs with granulated sugar and brown sugar until smooth. Add vegetable oil, yogurt, and vanilla extract, mixing until fully incorporated.
  5. Gently fold the squeezed zucchini into the wet mixture. Gradually add the dry ingredients, folding just until combined. Fold in chocolate chips.
  6. In a small bowl, mix brown sugar and ground cinnamon for the swirl.
  7. Pour half of the batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture evenly over it. Add the remaining batter on top, then finish with the rest of the cinnamon sugar. Use a skewer or knife to gently swirl the sugar through the batter.
  8. Bake for 50-60 minutes, starting to check at 50 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter. Tent with foil if the top browns too quickly.
  9. Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.

Notes

Squeezing the zucchini thoroughly is essential to avoid soggy bread. Use room temperature eggs and yogurt for better mixing. Fold ingredients gently to prevent tough crumb. Swirl cinnamon sugar lightly to keep texture interesting. Tent with foil if top browns too fast. Cool completely before slicing to avoid crumbling.
