  • 6 large ripe peaches, peeled and sliced
  • 2 tablespoons bourbon
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons all-purpose flour
  • 1 cup rolled oats
  • 1/3 cup packed brown sugar (for crumble topping)
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice 6 large ripe peaches into about 1/2-inch thick pieces. Place them in a large bowl.
  3. Pour 2 tablespoons bourbon and 1 tablespoon fresh lemon juice over the peaches. Toss gently to coat.
  4. Stir in 1/2 cup granulated sugar, 1/4 cup packed brown sugar, 1 teaspoon ground cinnamon, 2 tablespoons all-purpose flour, and a pinch of salt. Mix until the peaches are evenly coated.
  5. Transfer the peach mixture to your baking dish, spreading evenly.
  6. In a separate bowl, combine 1 cup rolled oats, 1/3 cup packed brown sugar, and 1 teaspoon vanilla extract (if using). Add 6 tablespoons cold unsalted butter cut into small pieces.
  7. Cut the butter into the oat mixture using a pastry cutter or two forks until it resembles coarse crumbs with some pea-sized bits.
  8. Sprinkle the oat crumble evenly over the peach filling, covering all the fruit.
  9. Place the baking dish in the preheated oven and bake for 35–40 minutes until the topping is golden brown and crisp and juices are bubbling.
  10. Let the crisp rest for about 10 minutes once out of the oven to thicken the filling.
  11. Serve warm with generous scoops of vanilla ice cream.

Notes

Use cold butter for the oat crumble to ensure a crisp topping. If peaches are extra juicy, add an extra tablespoon of flour to the filling to prevent sogginess. Tent with foil if topping browns too quickly. Frozen peaches can be used if thawed and drained well. For alcohol-free version, omit bourbon or replace with vanilla extract and apple juice. Gluten-free option available by substituting flour and oats.
