  • 1 tablespoon olive oil

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup amber ale or lager
  • 1/2 cup whole milk
  • 1 1/2 cups sharp cheddar cheese, freshly grated
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt to taste
  • Caramelized onions (optional, for topping)
  • Pickled jalapeños (optional, for topping)

Instructions

  1. Preheat your grill to medium-high heat (375-400°F). Remove bratwurst from refrigerator and let sit at room temperature for 10 minutes. Brush grill grates with olive oil.
  2. Place bratwurst on the grill perpendicular to the grates. Grill for 5-6 minutes per side, turning once, until casings are charred and internal temperature reaches 160°F.
  3. Transfer grilled bratwurst to a cutting board. Carefully split each link lengthwise about three-quarters of the way through. Return to grill cut side down and cook for 1-2 minutes until caramelized.
  4. Place slider buns cut side down on the cooler part of the grill. Toast for 1-2 minutes until golden with light grill marks.
  5. While bratwurst rests, melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute until bubbly and lightly golden. Slowly pour in beer while whisking continuously. Add milk and whisk until sauce thickens, about 3-4 minutes.
  6. Reduce heat to low. Add grated cheddar cheese a handful at a time, whisking until each addition is fully melted. Stir in Dijon mustard, garlic powder, and cayenne if using. Season with salt to taste. Keep warm over lowest heat.
  7. Place each split bratwurst on a toasted bun bottom. Drizzle generously with beer cheese sauce. Add desired toppings. Cap with bun top and serve immediately.

Notes

Don’t pierce the bratwurst casings while grilling to keep them juicy. For the cheese sauce, add cheese gradually over low heat to prevent graininess. Let bratwurst rest 2-3 minutes before splitting. Toast buns in rendered fat for extra flavor. Sauce can be made up to 3 days ahead and reheated gently with a splash of milk.
