  • 1 sheet puff pastry, thawed
  • 1 tablespoon olive oil
  • Sour cream (for the eyes)
  • 1 egg + 1 tablespoon water (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
  2. Make the filling: Heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the finely chopped onion and cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Mash the beans: In a medium bowl, add the drained and rinsed black beans. Use a fork to mash them until about 75% broken down. Add the cooked onion and garlic, then stir in the cumin, chili powder, smoked paprika, salt, and pepper. Mix until combined. Taste and adjust seasoning.
  4. Prepare the pastry: On a lightly floured surface, gently roll out the thawed puff pastry sheet to smooth out any creases. Use a pizza cutter or knife to cut the pastry into long strips about 1/2 inch wide. You’ll need about 6-8 strips per pie.
  5. Assemble the mummies: Spoon about 2 tablespoons of the black bean filling onto the center of the baking sheet, shaping it into a small oval mound. Take a pastry strip and wrap it around the filling, leaving a small gap at the top for the eyes. Repeat with more strips, overlapping slightly, until the filling is mostly covered. Tuck the ends of the strips under the pie.
  6. Add the egg wash: In a small bowl, whisk together 1 egg and 1 tablespoon of water. Use a pastry brush to lightly brush the tops of the pastry strips.
