Instructions

  1. Preheat oven to 375°F (190°C). If using a cast iron skillet, melt 1 tablespoon butter in it over low heat.
  2. Prepare the peaches: Bring a large pot of water to a boil. Score an X on the bottom of each peach, blanch for 30-45 seconds, then transfer to ice water. Peel and slice into ¼-inch wedges. Toss with lemon juice.
  3. Make the peach filling: In a medium bowl, combine sliced peaches, ½ cup sugar, cornstarch, vanilla, cinnamon (if using), and salt. Stir gently and let sit for 10 minutes.
  4. Make the biscuit topping: In a large bowl, whisk together flour, ½ cup sugar, baking powder, baking soda, and salt. Cut in cold butter using a pastry cutter until mixture resembles coarse meal with pea-sized butter pieces. Add buttermilk and stir just until dough comes together (do not overmix).
  5. Assemble the cobbler: Pour peach filling into the prepared skillet or baking dish. Drop spoonfuls of biscuit dough over the top. Sprinkle with extra sugar.
  6. Bake for 40-45 minutes, until biscuit topping is golden brown and filling is bubbling. If browning too quickly, tent with foil for last 10 minutes.
  7. Let cool on a wire rack for 15-20 minutes before serving. Serve warm with vanilla ice cream if desired.
