5-Ingredient Lasagna Soup: Easy Cozy Dinner

5-Ingredient Lasagna Soup - featured image

A quick and comforting weeknight dinner that captures the flavors of lasagna in a soup form. Using simple pantry staples like ground beef, marinara, and ricotta, this recipe comes together in under 30 minutes without the mess of traditional lasagna.

Ingredients

Scale
  • 1 lb ground beef (80/20 blend preferred)
  • 2 cups marinara sauce
  • 1 box (12 oz) lasagna noodles
  • 1 cup whole milk ricotta cheese
  • 4 cups chicken or beef broth

Instructions

  1. Heat a large pot over medium-high heat and brown the ground beef, breaking it up with a wooden spoon until crumbly (5-7 minutes). Drain excess grease if desired.
  2. Pour in the marinara sauce and broth, stirring to scrape up any browned bits from the bottom of the pot. Bring the mixture to a gentle simmer.
  3. Break the lasagna noodles in half or thirds and drop them into the simmering liquid. Cook for 10-12 minutes, stirring occasionally, until al dente.
  4. While noodles cook, whisk a small amount of hot soup liquid into the ricotta cheese in a separate bowl to temper it and prevent clumping.
  5. Turn off the heat and stir the tempered ricotta into the pot until melted and creamy. Adjust seasoning with salt and pepper if needed. Serve immediately.

Notes

If making ahead, cook noodles separately to prevent mushiness. For a lighter version, use ground turkey and skim milk. To make vegetarian, swap beef for mushrooms or lentils. Ensure ricotta is fresh for best texture. Temper ricotta with hot broth to ensure a smooth consistency.
