  • 1 round artisan sourdough or Italian bread loaf (sturdy with a good crust)
  • 1/2 cup (115 g) unsalted butter, softened
  • 4 garlic cloves, minced
  • 1/4 cup (25 g) grated Parmesan cheese
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 2 cups (200 g) shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Using a sharp serrated knife, slice the bread horizontally into about 1.5-inch thick slices, but do not cut all the way through the bottom—leave about 1/2 inch uncut to keep the loaf intact. Then slice vertically in the same way to create a grid pattern of pull-apart cubes.
  3. In a mixing bowl, combine softened butter, minced garlic, grated Parmesan, salt, black pepper, and optional red pepper flakes. Mix until smooth and creamy.
  4. Spread the garlic butter mixture generously between each bread slice, coating all sides of the cubes.
  5. Stuff shredded mozzarella cheese into the gaps between the bread cubes.
  6. Shape the loaf into a wreath form if it is not already round. Place on the prepared baking sheet and sprinkle chopped parsley on top.
  7. Bake for 20-25 minutes until the cheese is melted, bubbly, and the bread edges are golden and crisp. If browning too fast, tent with foil for the first 15 minutes.
  8. Let cool for about 5 minutes before serving to allow the cheese to set slightly but remain pull-apart soft.

Notes

Do not slice all the way through the bread to keep the loaf intact for easy pull-apart pieces. Use softened butter for even spreading. Tent with foil if bread browns too quickly before cheese melts. Reheat leftovers in a 350°F oven for 10-15 minutes to restore crispness and melty cheese. Avoid microwaving to prevent chewy texture.
