These savory Philly cheesesteak sliders feature thinly sliced ribeye steak, caramelized onions, and melty provolone cheese on soft slider buns, perfect for quick meals and parties.

Ingredients

  • 1 lb ribeye steak, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Worcestershire sauce
  • 12 slider buns, preferably soft and slightly sweet
  • 68 slices provolone cheese (about 2 oz or 60 g per 4 sliders)
  • 2 tablespoons unsalted butter, melted
  • Optional: sliced bell peppers or mushrooms

Instructions

  1. Slice ribeye steak as thin as possible, about 1/8 inch thick. Optionally, freeze steak for 15 minutes to firm up for easier slicing.
  2. Thinly slice onion and mince garlic.
  3. Heat olive oil in a skillet over medium heat. Add onions and a pinch of salt, cook until caramelized (10-12 minutes), then add garlic and cook 1 more minute. Remove and set aside.
  4. In the same skillet, add more oil if needed and heat to medium-high. Cook steak in batches, seasoning with salt, pepper, and Worcestershire sauce, about 2-3 minutes per side until browned but juicy.
  5. Return onions and garlic to skillet with beef, stir to combine and heat through. Adjust seasoning as needed.
  6. Preheat oven to 350°F (175°C). Slice slider buns in half horizontally and brush cut sides with melted butter.
  7. Assemble sliders by layering beef mixture on bottom buns, topping with provolone cheese slices (about one slice per two sliders), then placing top buns on.
  8. Place sliders on a baking sheet and bake for 7-10 minutes until cheese melts and buns are warmed and slightly toasted.
  9. Serve immediately warm and melty.

Notes

For gluten-free, use gluten-free slider rolls or lettuce cups. For dairy-free, use vegan cheese and dairy-free butter. Thinly slice steak for best texture. Avoid overcrowding pan when cooking beef. Optionally broil sliders 1-2 minutes for extra melty cheese. Let beef rest before assembling to keep juices locked in.
