  • 3 tablespoons honey (preferably raw, local honey)
  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon dried thyme (or fresh)
  • Salt and black pepper to taste
  • 1 pound carrots (450 grams), peeled and cut into sticks or rounds
  • A handful fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat chicken thighs dry with paper towels and season generously with salt, pepper, and dried thyme on both sides.
  3. In a small bowl, whisk together honey, fresh lemon juice, minced garlic, and olive oil until combined.
  4. Heat an oven-safe skillet over medium-high heat. Add chicken thighs skin side down and sear for 5-7 minutes without moving them to build a golden crust. Flip and cook for another 3 minutes on the other side.
  5. While chicken sears, toss carrot sticks in a mixing bowl with a pinch of salt, a drizzle of olive oil, and a little black pepper.
  6. Arrange carrots around the chicken thighs in the skillet (or transfer everything to a baking dish). Pour the honey-lemon sauce evenly over the chicken and carrots.
  7. Transfer the skillet to the oven and roast for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and carrots are tender and caramelized.
  8. Remove from oven and let chicken rest for 5 minutes. Sprinkle chopped fresh parsley on top before serving.

Notes

Dry the chicken skin thoroughly before searing to ensure crispiness. Do not move chicken while searing to build a golden crust. If honey sauce darkens too quickly, tent with foil or reduce oven temperature to 400°F (205°C). For extra crispiness, broil chicken for last 2 minutes but watch carefully to avoid burning. Carrots can be par-cooked in boiling water for 3-4 minutes to speed roasting.
