These bacon-wrapped jalapeño popper stuffed burgers combine smoky, spicy, and creamy flavors for a juicy, flavorful burger perfect for BBQs and weeknight grilling.

Ingredients

Scale
  • 1.5 lbs ground beef (80/20 blend)
  • 3 medium jalapeños, seeded and finely chopped
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 8 strips bacon (thin-cut or thick-cut)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Optional: ½ tsp smoked paprika

Instructions

  1. Prepare the filling: In a small bowl, combine softened cream cheese, shredded cheddar, and chopped jalapeños. Mix well until creamy and evenly blended. Optionally, stir in garlic powder or smoked paprika.
  2. Season the beef: In a large bowl, mix ground beef with garlic powder, onion powder, salt, and black pepper. Combine gently without overworking.
  3. Form the patties: Divide beef mixture into eight equal portions (~3 oz each). Flatten each into thin patties about ¼ inch thick.
  4. Add the filling: Place a spoonful of jalapeño popper mixture onto four patties, leaving edges clear. Top with remaining patties and press edges firmly to seal.
  5. Wrap with bacon: Lay a bacon strip flat, place a stuffed patty at one end, and roll tightly to wrap bacon around the burger. Secure with toothpicks if needed. Repeat for all patties.
  6. Preheat grill or pan to medium-high heat (~375°F). If using a pan, lightly oil it.
  7. Cook the burgers: Grill or pan-cook bacon-wrapped burgers for 6-7 minutes per side until internal temperature reaches 160°F. Watch bacon to prevent burning, moving burgers to cooler spots if necessary.
  8. Rest the burgers: Remove from heat and let rest covered loosely with foil for 5 minutes before serving.

Notes

Seal the edges of patties tightly to prevent filling leaks. Chill patties before grilling to help bacon stay wrapped. Use indirect heat after searing to avoid burning bacon. Rest burgers after cooking for juicy results. Bacon can burn quickly, so monitor closely and rotate as needed.
