Ingredients

Scale
  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature
  • 2 teaspoons pure vanilla extract
  • For the Frosting:
  • 1 cup (227g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 ½ teaspoons pure vanilla extract
  • 24 tablespoons (30-60ml) whole milk or heavy cream
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch (20 cm) cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Alternately add dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients. Add vanilla extract. Mix on low speed until just combined.
  6. Divide batter evenly into prepared pans. Tap pans gently to release air bubbles.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool cakes in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  9. For the frosting, beat softened butter on medium speed until creamy, about 2 minutes.
  10. Gradually add powdered sugar on low speed. Add vanilla extract, salt, and milk or cream to reach desired consistency. Beat on high for a fluffy finish.
  11. Place one cake layer on serving plate. Spread frosting on top. Place second layer on top and frost entire cake evenly.
  12. Use an offset spatula for smooth edges. Chill briefly if needed to set frosting.

Notes

Use room temperature ingredients for best results. Cream butter and sugar until pale and fluffy to trap air for a tender crumb. Alternate dry and wet ingredients to avoid overmixing. Sift powdered sugar for smooth frosting. Chill frosting if too soft before spreading. Level cake layers if domed before frosting.
