A quick and easy recipe to create a beautiful and delicious chocolate covered strawberry bouquet, perfect for gifting on Valentine’s Day or any special occasion.

Ingredients

Scale
  • 2 pounds (900g) fresh strawberries, firm and ripe with green tops
  • 12 ounces (340g) good-quality dark chocolate chips or bars (60-70% cocoa recommended)
  • 4 ounces (115g) white chocolate (optional, for drizzling)
  • 12 teaspoons vegetable or coconut oil (for smooth melting and shine)
  • A handful of edible greenery or flowers (mint leaves, rosemary sprigs, pansies, etc.)
  • 1215 wooden skewers or floral sticks
  • Ribbon or decorative wrap for bouquet presentation

Instructions

  1. Wash and dry strawberries thoroughly (about 10 minutes).
  2. Line a baking sheet with parchment paper and insert wooden skewers into strawberries through the green tops.
  3. Melt dark chocolate with 1 teaspoon of vegetable or coconut oil using a double boiler or microwave, stirring until smooth (about 10 minutes).
  4. Dip each strawberry into melted chocolate, coating evenly. Let excess drip off and place on parchment-lined tray. For thicker coating, let first layer set and dip again (about 10 minutes).
  5. Melt white chocolate with a bit of oil separately and drizzle over dipped strawberries using a spoon or small brush (optional, about 5 minutes).
  6. Chill dipped strawberries in refrigerator for 15 minutes to set chocolate.
  7. Assemble the bouquet by arranging chocolate covered strawberries in a foam block or sturdy vase, alternating with edible greenery or flowers. Wrap the base with decorative paper or fabric and secure with ribbon (about 15 minutes).
  8. Optionally mist greenery lightly with water if dry, avoiding contact with strawberries. Store bouquet in refrigerator until gifting.

Notes

Dry strawberries thoroughly to prevent chocolate from seizing. Use good-quality chocolate for smooth melting. Keep chocolate warm during dipping to avoid clumping. Double dip for thicker coating. Assemble bouquet close to gifting time for freshness. Store refrigerated and consume within 24-48 hours. Avoid reheating.
