  • 1 cup brown sugar, packed
  • 1 can (about 20 ounces) canned pineapple rings, drained, reserve juice
  • 1/2 cup maraschino cherries, drained
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cloves, ground or whole (optional)
  • Pinch of salt
  • Freshly ground black pepper, to taste
  • 1/4 cup water
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch (optional)

Instructions

  1. Preheat the oven to 325°F (163°C). Prepare a roasting pan with a rack if available.
  2. Score the ham’s surface in a diamond pattern with shallow diagonal cuts about 1/4 inch deep.
  3. In a bowl, mix brown sugar, reserved pineapple juice, Dijon mustard, apple cider vinegar, ground cinnamon, cloves, salt, and black pepper until smooth to make the glaze.
  4. Place the ham in the roasting pan. Arrange pineapple rings and maraschino cherries on top, securing with toothpicks if needed.
  5. Brush the glaze generously over the ham, reserving some for basting during cooking.
  6. Roast the ham for about 15-18 minutes per pound, basting with additional glaze every 20 minutes. For a 7-pound ham, roast about 1 hour 45 minutes to 2 hours. Tent with foil if glaze starts to burn.
  7. Check internal temperature aiming for 140°F (60°C).
  8. While the ham roasts, prepare the cherry sauce: melt butter in a medium saucepan over medium heat, add cherries and sauté 2 minutes.
  9. Stir in lemon juice and pineapple juice. If thicker sauce is desired, whisk cornstarch with cold water and add to saucepan. Simmer until thickened, about 5-7 minutes.
  10. Remove ham from oven and let rest 10-15 minutes before slicing.
  11. Serve ham slices with warm cherry sauce drizzled on top or on the side.

Notes

Use a basting brush for even glaze application to prevent burning. Tent ham with foil if glaze caramelizes too quickly. Cherry sauce can be made ahead and reheated gently. For gluten-free, ensure mustard and vinegar are certified gluten-free. Leftovers keep well refrigerated for up to 4 days and taste better the next day.
