Magical Color-Changing Butterfly Pea Flower Lemonade

A refreshing and visually stunning lemonade that changes color from blue to purple-pink when lemon juice is added, made with butterfly pea flowers, fresh lemons, and a touch of sweetener.

Ingredients

  • 1 tablespoon dried butterfly pea flowers
  • 2 large fresh lemons, juiced (about 1/3 cup or 80 ml)
  • 4 cups water (divided: 2 cups hot for steeping, 2 cups cold for diluting)
  • 1/4 to 1/3 cup cane sugar or sweetener of choice (5065 g)
  • Ice cubes (optional, for serving)
  • Optional garnishes: fresh mint leaves, lemon slices, edible flowers

Instructions

  1. Bring 2 cups (475 ml) of water to a near boil (about 200°F or 93°C). Pour over 1 tablespoon of dried butterfly pea flowers in a heatproof pitcher. Let steep for 5–7 minutes until the water turns a rich blue color.
  2. Strain the tea through a fine mesh strainer into a clean container, discarding the flowers.
  3. While the tea is still warm, stir in 1/4 to 1/3 cup (50–65 g) of your chosen sweetener until fully dissolved. Adjust sweetness to taste.
  4. Juice 2 large lemons to yield about 1/3 cup (80 ml) of lemon juice. Strain out any seeds.
  5. Slowly pour the lemon juice into the blue tea, stirring gently. Watch the color shift from deep blue to purple-pink.
  6. Add the remaining 2 cups (475 ml) of cold water to dilute the lemonade to your preferred strength. Stir to combine.
  7. Serve over ice cubes and garnish with fresh mint or lemon slices if desired.

Notes

Use fresh lemon juice for the best color change effect. Avoid over-steeping the butterfly pea flowers to prevent bitterness. Add lemon juice just before serving to keep the color vibrant. For a sparkling version, replace some or all cold water with sparkling water.
