  • Salt and pepper to taste
  • 2 cups shredded sharp cheddar cheese
  • Optional: 1 cup shredded mozzarella cheese
  • 1 cup diced tomatoes (fresh or canned, drained)
  • 1/2 cup sliced black olives
  • 1/2 cup sliced jalapeños (pickled or fresh)
  • 1/2 cup chopped green onions
  • 1/2 cup chopped fresh cilantro
  • 1 ripe avocado, diced or mashed as guacamole
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup fresh salsa or pico de gallo
  • Optional: hot sauce or a squeeze of lime

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add chopped onion and sauté for about 3 minutes until translucent.
  3. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Add ground beef, breaking it up with a spoon. Cook for 6-8 minutes until browned and cooked through.
  5. Sprinkle in taco seasoning, mix well, and cook for another 2 minutes. Taste and add salt and pepper as needed. Remove from heat.
  6. Spread a generous layer of tortilla chips evenly on a baking sheet or oven-safe skillet.
  7. Spoon the seasoned ground beef evenly over the chips.
  8. Sprinkle shredded cheddar and mozzarella cheese (if using) generously on top, covering the layers well.
  9. Bake in the oven for 10-12 minutes until cheese is fully melted and bubbly. Watch to avoid burning the chips.
  10. Remove from oven and immediately scatter diced tomatoes, black olives, jalapeños, green onions, and cilantro over the melted cheese.
  11. Dollop sour cream or Greek yogurt and add spoonfuls of salsa or guacamole on top.
  12. Serve immediately while warm and fresh.
