A quick and easy summer salad combining sweet watermelon, tangy feta cheese, and fresh mint for a refreshing and vibrant dish perfect for gatherings.

  • 4 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • Pinch of sea salt
  • Freshly ground black pepper, a few twists (optional)
  • 2 tablespoons red onion, finely sliced (optional)

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into bite-sized cubes.
  2. Thinly slice 2 tablespoons of red onion. Optional: soak in cold water for 10 minutes and drain to mellow flavor.
  3. Roughly chop about 1/4 cup (10g) of fresh mint leaves.
  4. In a large mixing bowl, gently toss the watermelon cubes, crumbled feta cheese, chopped mint, and optional onion slices.
  5. Drizzle 2 tablespoons of extra virgin olive oil and 1 tablespoon of fresh lime juice over the salad. Sprinkle a pinch of sea salt and a few twists of freshly ground black pepper. Toss lightly to combine.
  6. Chill the salad in the fridge for 10-15 minutes before serving for best flavor.

Notes

Use a sharp knife to cut watermelon to avoid excess juice. Rinse feta if too salty. Chill salad before serving for best flavor. Optional ingredients like red onion add crunch. For dairy-free, substitute feta with firm tofu or vegan cheese.
