Fresh Watermelon Feta Salad with Mint

A quick and refreshing summer salad combining juicy watermelon, salty feta, fresh mint, and a tangy-sweet balsamic glaze. Perfect for hot days and easy to prepare in under 5 minutes.

Ingredients

  • 4 cups watermelon, cubed (seedless, ripe)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil (optional)
  • Freshly cracked black pepper, to taste
  • Pinch of sea salt (optional)

Instructions

  1. Cut about 4 cups (roughly 600 grams) of watermelon into bite-sized cubes and place in a mixing bowl.
  2. Add 1 cup (about 150 grams) of crumbled feta cheese to the watermelon.
  3. Roughly chop 1/4 cup (about 10 grams) of fresh mint leaves and sprinkle over the salad.
  4. Drizzle 1 tablespoon (15 ml) of extra virgin olive oil over the salad (optional).
  5. Lightly crack fresh black pepper over the salad and add a pinch of sea salt if needed.
  6. Drizzle 2 tablespoons (30 ml) of balsamic glaze over the top.
  7. Gently toss the salad to combine everything without breaking up the watermelon or feta too much.
  8. Serve immediately for best freshness.

Notes

Use ripe, seedless watermelon with a deep red color for best sweetness. Do not over-chop mint to avoid bitterness. Use a thick balsamic glaze for best flavor; if unavailable, reduce balsamic vinegar to a syrup. Prepare just before serving to keep watermelon crisp. Optional: add toasted nuts or substitute herbs for variation.
