  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • Pinch of sea salt

Instructions

  1. Prepare the Granola (15 minutes): Preheat oven to 325°F (160°C). In a mixing bowl, combine rolled oats, chopped nuts, coconut flakes, maple syrup, cinnamon, and sea salt. Toss to coat evenly. Spread mixture in a thin layer on a baking sheet. Bake for 12-15 minutes, stirring halfway through. Let cool completely.
  2. Make the Strawberry Topping (5 minutes): Hull and slice strawberries. Toss with lemon juice and chia seeds (if using). Set aside to let chia seeds plump and flavors meld.
  3. Blend the Nice Cream (10 minutes): Place frozen banana slices, vanilla extract, and almond milk in a high-powered blender or food processor. Blend on high, scraping sides as needed, until smooth and creamy. Add more almond milk if too thick, but keep thick consistency.
  4. Assemble the Bowl (5 minutes): Scoop nice cream into bowls. Top with strawberry mixture and granola. Add extra strawberries or maple syrup if desired.
  5. Enjoy Immediately: Best served right away for soft, creamy texture. Store leftovers in an airtight container in the freezer up to 3 days; thaw 10 minutes before serving.
