  • 1 cup (240 ml) full-fat or 2% Greek yogurt
  • 1 medium orange, peeled and segmented
  • 1 small grapefruit, peeled and segmented
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons unsweetened toasted coconut flakes
  • 1 teaspoon chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Toast the coconut flakes in a dry skillet over medium heat for 3-5 minutes, stirring frequently until golden brown and aromatic. Remove from heat and let cool.
  2. Peel and segment the orange and grapefruit, removing all white pith and membranes. Collect any juice that drips for extra flavor.
  3. In a medium bowl, combine Greek yogurt, fresh lemon juice, honey or maple syrup, and vanilla extract. Stir gently until smooth and well blended. Adjust sweetness if needed.
  4. Spoon the yogurt mixture into a serving bowl. Arrange the citrus segments on top and drizzle any reserved juice over them.
  5. Sprinkle toasted coconut flakes evenly over the citrus and yogurt. Add chia seeds if using, and garnish with fresh mint leaves.
  6. Serve immediately for best texture and flavor. Optionally chill for 5-10 minutes before serving.
