  • ½ cup (75 g) fresh raspberries
  • 2 tablespoons (30 ml) honey
  • ½ teaspoon (2.5 ml) vanilla extract (optional)
  • 1 teaspoon (5 g) chia seeds (optional)
  • A few sprigs fresh mint leaves (for garnish)
  • ½ teaspoon lemon zest (optional)

Instructions

  1. Measure 1 cup (240 ml) of small-curd cottage cheese and place it into a mixing bowl. Whisk gently for about 30 seconds if a smoother texture is desired.
  2. Stir in ½ teaspoon (2.5 ml) vanilla extract and ½ teaspoon lemon zest if using, mixing gently to distribute evenly.
  3. Carefully fold in ½ cup (75 g) fresh raspberries using a spoon or spatula to avoid crushing them.
  4. Drizzle 2 tablespoons (30 ml) honey over the mixture and stir lightly to combine. Reserve some honey for drizzling on top if desired.
  5. Sprinkle 1 teaspoon (5 g) chia seeds into the bowl if using, just before serving.
  6. Transfer the mixture into a serving bowl or glass. Garnish with fresh mint leaves and a few whole raspberries on top.
  7. Serve immediately for best flavor and texture, or cover and refrigerate for up to 2 hours (chia seeds may thicken the mixture).

Notes

Use small-curd cottage cheese for best texture. Fold berries gently to avoid crushing. Add honey last to adjust sweetness. Chia seeds thicken the mixture if added early. Can substitute frozen berries (thawed) or other berries. For vegan version, use plant-based cottage cheese and maple syrup instead of honey.
