A refreshing and easy-to-make chia pudding bowl featuring a zesty citrus cocktail and crunchy granola, perfect for Valentines Day or any cozy brunch.

Ingredients

Scale
  • 1/4 cup (40g) chia seeds
  • 1 cup (240ml) full-fat coconut milk
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (60ml) fresh orange juice
  • 2 tablespoons (30ml) fresh lemon juice
  • 1/4 cup (60ml) sparkling water
  • 1 teaspoon (2g) orange zest
  • 1 teaspoon (2g) lemon zest
  • Granola (to taste)
  • Fresh berries (optional, such as strawberries or raspberries)

Instructions

  1. In a medium bowl, combine chia seeds, coconut milk, maple syrup, and vanilla extract. Whisk well to break up any clumps and evenly distribute the seeds. Let sit for 5 minutes, then whisk again to prevent clumping.
  2. Cover the bowl and refrigerate for at least 2 hours or overnight until the pudding thickens to a creamy, gel-like consistency. If too thick, stir in a splash more coconut milk to loosen.
  3. Just before serving, mix fresh orange juice, fresh lemon juice, and sparkling water in a small bowl. Add orange zest and lemon zest, then stir gently.
  4. Spoon the chia pudding into serving bowls or glasses. Gently pour the citrus cocktail over the top.
  5. Sprinkle granola generously over each bowl. Add fresh berries if desired.
  6. Serve immediately to keep granola crunchy and citrus bright. If preparing in advance, add sparkling water and granola just before serving.

Notes

Add granola just before serving to keep it crunchy. Use full-fat coconut milk for creaminess. Freshly squeezed citrus juice and zest enhance flavor. Adjust sweetness to taste. For a warm twist, microwave pudding for 30 seconds before serving with toasted granola.
