  • ½ cup (120 ml) plain, unsweetened Greek yogurt
  • 2 tablespoons honey (or maple syrup/agave)
  • 1 teaspoon vanilla extract
  • ½ cup (80 grams) fresh pomegranate seeds
  • 50 grams (1.75 oz) dark chocolate (70% cocoa or higher)
  • 2 tablespoons chopped almonds (optional)
  • ¼ teaspoon cinnamon

Instructions

  1. In a medium mixing bowl, combine 1 cup (240 ml) of cottage cheese and ½ cup (120 ml) of Greek yogurt. Whip together using a hand mixer or whisk for 2-3 minutes until smooth and creamy but still slightly textured.
  2. Stir in 2 tablespoons honey, 1 teaspoon vanilla extract, and ¼ teaspoon cinnamon until fully incorporated.
  3. Chop 50 grams (1.75 oz) dark chocolate into small pieces. Melt using a double boiler or microwave in 20-second bursts, stirring between, until smooth and glossy. Set aside to cool slightly without hardening.
  4. Spoon half of the cottage cheese mixture into serving bowls or glasses. Add a layer of about ¼ cup (40 grams) fresh pomegranate seeds on top.
  5. Add the remaining cottage cheese mixture over the pomegranate seeds. Finish with a final sprinkle of pomegranate seeds on top.
  6. Drizzle the melted dark chocolate over the top in a zigzag pattern. Optionally, sprinkle 2 tablespoons chopped almonds for extra crunch.
  7. Chill the bowls in the refrigerator for at least 10 minutes before serving to let flavors meld and chocolate set slightly. Serve chilled or at room temperature.

Notes

If fresh pomegranate seeds are unavailable, frozen seeds can be thawed and drained before use. For dairy-free or vegan versions, substitute cottage cheese and Greek yogurt with coconut yogurt or plant-based alternatives and replace honey with maple syrup. Melt chocolate carefully to avoid scorching; if chocolate seizes, add a teaspoon of warm milk or cream to restore smoothness. Fold pomegranate seeds gently to keep them intact. Assemble chocolate drizzle and nuts just before serving for best presentation.
