A quick and easy frozen yogurt bark recipe that stays firm without melting, featuring Greek yogurt, honey, cornstarch, and customizable toppings like fresh berries and nuts. Perfect for summer treats and gatherings.

  • 2 cups (480 ml) plain Greek yogurt, full-fat or 2%
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • Fresh berries (strawberries, blueberries, raspberries) – sliced if large
  • Chopped toasted nuts (almonds, pistachios, walnuts)
  • Mini dark chocolate chips or cacao nibs (optional)
  • Shredded coconut, unsweetened
  • Optional toppings: chia seeds, freeze-dried fruit pieces, drizzle of nut butter or melted dark chocolate

Instructions

  1. In a medium bowl, whisk together 2 cups (480 ml) of Greek yogurt, 2 tablespoons honey (or maple syrup), and 1 teaspoon vanilla extract until smooth.
  2. Sprinkle in 1 tablespoon cornstarch and whisk again to combine fully.
  3. Line a baking sheet (9×13 inches) with parchment paper or a silicone baking mat.
  4. Pour the yogurt mixture onto the lined tray and spread evenly to about a 1/4-inch (6 mm) thickness using a spatula.
  5. Scatter your choice of fresh berries, chopped nuts, chocolate chips, shredded coconut, or other mix-ins evenly across the surface and press lightly.
  6. Place the tray flat in the freezer and freeze for at least 4 hours or until completely firm (overnight recommended).
  7. Once firm, lift the parchment paper from the tray and break or cut the bark into irregular pieces or bars.
  8. Transfer pieces to an airtight container or freezer bag and keep frozen until ready to enjoy.

Notes

Use cornstarch to prevent melting and watery texture. Drain watery yogurt in a fine mesh strainer for 15 minutes before mixing for best texture. Freeze-dried fruits and toasted nuts hold up better than fresh fruits for crunch. Let bark thaw 5 minutes at room temperature before breaking for easier handling.
