A quick and easy honey balsamic glazed salmon with roasted asparagus that balances sweet and tangy flavors, perfect for a healthy and impressive weeknight dinner.

  • 4 skin-on salmon fillets (about 6 ounces / 170 grams each), fresh and preferably wild-caught
  • 1 bunch asparagus (about 1 pound / 450 grams), trimmed
  • 3 tablespoons honey, raw or mild-flavored
  • 2 tablespoons balsamic vinegar, aged if possible
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard (optional)
  • Salt and freshly ground black pepper, to taste
  • Small handful of chopped fresh parsley or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse and trim the tough ends of the asparagus (about 1-2 inches). Spread asparagus evenly on one side of the baking sheet. Drizzle with 1 tablespoon olive oil, sprinkle with salt and pepper, and toss gently to coat.
  3. In a small bowl, whisk together honey, balsamic vinegar, minced garlic, Dijon mustard, and the remaining 1 tablespoon olive oil until smooth and glossy.
  4. Pat the salmon fillets dry with paper towels. Season lightly with salt and pepper on both sides.
  5. Place the salmon fillets skin-side down on the empty side of the baking sheet. Brush each fillet generously with the honey balsamic glaze, reserving a small amount for later.
  6. Roast in the oven for about 12-15 minutes, depending on thickness. Halfway through cooking (around 7 minutes), carefully turn the asparagus with tongs for even roasting.
  7. During the last 2 minutes, brush the salmon again with the reserved glaze to build a shiny, sticky finish.
  8. Remove from the oven and let the salmon rest for a couple of minutes. Sprinkle chopped fresh herbs on top for garnish.
  9. Serve immediately with the roasted asparagus and a wedge of lemon if desired.

Notes

Pat salmon dry before seasoning for better glaze adhesion. Apply glaze twice for a sticky finish. Turn asparagus halfway through roasting for even browning. Avoid overcrowding the baking sheet to prevent steaming. Salmon should flake easily and remain moist inside. Use good quality balsamic vinegar for best flavor. Leftovers keep well for 2 days and reheat gently in a low oven to avoid drying out.
