A quick and easy frozen yogurt bark featuring creamy Greek yogurt, mixed berries, and crunchy granola. This healthy snack is perfect for any occasion and customizable to your taste.

  • 2 cups (475 ml) plain Greek yogurt
  • 1½ cups (225 g) mixed berries (strawberries, blueberries, raspberries, blackberries), frozen or fresh
  • ¾ cup (90 g) granola
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • Optional add-ins: toasted coconut flakes, chia seeds, cinnamon

Instructions

  1. In a mixing bowl, combine 2 cups (475 ml) of plain Greek yogurt with 2 tablespoons of honey or maple syrup and 1 teaspoon of vanilla extract. Stir well until smooth and creamy.
  2. Line a rimmed baking sheet (about 9×13 inches) with parchment paper.
  3. Pour the sweetened yogurt onto the parchment and spread evenly into a thin layer about ¼ inch thick.
  4. Scatter 1½ cups of mixed berries evenly over the yogurt layer and gently press them in slightly.
  5. Sprinkle ¾ cup of granola on top, pressing lightly to secure without crushing the clusters.
  6. Freeze the tray for at least 4 hours or until completely firm, preferably overnight.
  7. Lift the parchment paper out of the tray and break or cut the bark into irregular pieces about 2-3 inches wide.
  8. Serve immediately or store pieces in an airtight container in the freezer for up to 2 weeks.

Notes

Let the yogurt mixture sit at room temperature for a few minutes if too thick to spread. Warm your hands slightly to break the bark cleanly. Use parchment paper or a silicone baking mat for easier cleanup. Customize toppings as desired. Store in an airtight container in the freezer for up to 2 weeks.
