A quick and easy healthy breakfast bowl featuring creamy cottage cheese, juicy orange segments, and crunchy toasted coconut flakes. Perfect for a refreshing start to your day.

  • 1 cup (225 g) small-curd full-fat cottage cheese
  • 1 large orange, peeled and sectioned (navel or blood orange)
  • 2 tablespoons unsweetened toasted coconut flakes
  • 1 teaspoon honey or maple syrup (optional)
  • 1 tablespoon chopped nuts (optional, toasted almonds or pecans)
  • A few fresh mint leaves for garnish

Instructions

  1. Toast the coconut flakes in a dry skillet over medium heat, stirring frequently, until golden brown and fragrant, about 3-5 minutes. Remove from heat and let cool.
  2. Carefully peel the orange, removing all white pith. Segment the orange by cutting between the membranes to release clean slices. Set aside the juicy segments.
  3. Spoon 1 cup of small-curd cottage cheese into a serving bowl.
  4. Arrange the orange segments evenly on top of the cottage cheese.
  5. Drizzle 1 teaspoon of honey or maple syrup over the bowl if desired.
  6. Sprinkle the toasted coconut flakes evenly over the bowl, followed by the optional chopped nuts.
  7. Garnish with fresh mint leaves and serve immediately.

Notes

Toast coconut flakes carefully over medium-low heat and stir constantly to avoid burning. Use small-curd cottage cheese for best texture. Assemble just before serving to keep textures fresh and crunchy. For vegan version, substitute cottage cheese with coconut yogurt or plant-based ricotta and use maple syrup as sweetener.
