  • 3 ½ cups all-purpose flour (plus extra for dusting)
  • 2 ¼ tsp active dry yeast (one packet)
  • ½ cup whole milk, warmed (around 110°F / 43°C)
  • ½ cup warm water (110°F / 43°C)
  • ¼ cup granulated sugar
  • 4 tbsp unsalted butter, melted
  • 1 large egg, room temperature
  • 1 tsp salt
  • For the Cinnamon Butter Spread:
  • ½ cup unsalted butter, softened
  • ¼ cup powdered sugar
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Activate the yeast by combining warm water, warm milk, and sugar in a small bowl. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. In a large bowl or stand mixer, combine flour and salt. Add melted butter, egg, and the activated yeast mixture. Mix on low speed until dough starts to come together, about 3 minutes.
  3. Knead the dough for 8-10 minutes by hand or 5-6 minutes with a stand mixer until smooth and elastic. Add flour 1 tbsp at a time if dough is too sticky.
  4. Lightly oil a large bowl, place dough inside, cover with plastic wrap or damp towel, and let rise in a warm spot for about 1 hour until doubled in size.
  5. Punch down dough and turn onto floured surface. Divide into 12 equal pieces (about 2.5 oz each). Shape each piece into a smooth ball.
  6. Place dough balls close together in a greased round pan or baking sheet. Cover and let rise for another 30-40 minutes until puffy.
  7. Preheat oven to 350°F (175°C). Bake rolls for 18-20 minutes until golden brown and bottoms sound hollow when tapped.
  8. While rolls bake, beat softened butter, powdered sugar, cinnamon, vanilla, and salt until smooth and fluffy to make cinnamon butter spread.
  9. Brush hot rolls generously with melted butter right out of the oven. Serve warm with a dollop of cinnamon butter spread.

Notes

Use a kitchen thermometer to ensure milk and water are at the right temperature (110°F) for yeast activation. Do not skip the second rise for best fluffiness. Add flour gradually if dough is sticky. Store leftover rolls in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
