  • 2 ¼ teaspoons active dry yeast (one packet)
  • ¼ cup honey (60ml), plus extra for glaze
  • 1 cup warm milk (240ml), about 110°F (43°C)
  • ¼ cup unsalted butter (57g), softened for dough
  • 3 tablespoons unsalted butter (43g), melted for glaze
  • 1 large egg, room temperature
  • 1 teaspoon salt
  • Optional: pinch of cinnamon or nutmeg

Instructions

  1. Activate the yeast: In a mixing bowl, whisk together warm milk and honey. Sprinkle active dry yeast on top and let sit until foamy and bubbly, about 5 to 10 minutes.
  2. Mix the dough: Add softened butter, egg, salt, and 2 cups (250g) of flour to the yeast mixture. Stir until combined, then gradually add remaining flour, ½ cup (65g) at a time, until dough pulls away from bowl sides but remains slightly sticky.
  3. Knead the dough: Knead until smooth and elastic, about 8-10 minutes. Add flour sparingly if too sticky.
  4. First rise: Place dough in lightly oiled bowl, cover with towel or plastic wrap, and let rise in warm spot until doubled in size, about 60-75 minutes.
  5. Shape the rolls: Punch down dough, divide into 12 equal pieces (~2 ounces or 60g each). Roll into smooth balls and place close but not touching in greased 8×8 inch baking dish.
  6. Second rise: Cover and let rolls rise until puffed and nearly doubled, about 30-45 minutes.
  7. Bake: Preheat oven to 375°F (190°C). Bake rolls on center rack for 20-25 minutes until golden brown and hollow sounding when tapped.
  8. Apply glaze: Mix melted butter with 2 tablespoons honey and a pinch of salt. Brush generously over hot rolls. Let cool slightly before serving.

Notes

Use warm milk at about 110°F to activate yeast properly. Avoid adding too much flour to keep rolls soft. Brush glaze immediately after baking for a shiny finish. Cover rolls with a towel while cooling to keep crust soft. Dough can be refrigerated overnight after shaping for convenience.
