Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs carefully into two bowls—yolks in one, whites in the other, ensuring no yolk gets into the whites.
  3. Using an electric mixer on medium speed, whip the egg whites until foamy. Gradually add 1 tablespoon sugar while beating on high speed until stiff, glossy peaks form (3-5 minutes).
  4. In the yolk bowl, add softened cream cheese, vanilla extract, salt, and baking powder. Mix until smooth and creamy.
  5. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it. Then fold in the remaining whites in two additions, folding slowly to keep air in.
  6. Spoon the batter onto the parchment in six equal dollops. Use the back of a spoon to smooth and shape each into a round cloud about 3-4 inches wide. Leave space between each.
  7. Bake for 25-30 minutes until light golden and the surface is dry and firm.
  8. Remove from oven and let cool on the baking sheet for 10 minutes before transferring to a wire rack. Handle gently as they are fragile when warm.
