Instructions

  1. Cut chicken into 1-inch pieces, quarter potatoes, slice bell peppers and onions thinly, and mince garlic. Keep everything roughly the same size for even cooking.
  2. In a large mixing bowl, combine chicken, potatoes, bell peppers, onions, and garlic. Drizzle 2 tablespoons olive oil over the mix.
  3. Sprinkle 1 teaspoon smoked paprika, 1 teaspoon dried Italian herbs, 3/4 teaspoon salt, and 1/2 teaspoon black pepper over everything. Toss thoroughly to coat all ingredients.
  4. Tear off four sheets of heavy-duty aluminum foil, each about 12×12 inches. Divide the mixture evenly among packets, placing ingredients in the center.
  5. Fold the foil over the mixture and crimp edges tightly to form sealed packets, ensuring no gaps remain.
  6. Place packets on hot coals or grill grate over campfire. Flip every 8-10 minutes using tongs for even cooking. Cook for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C).
  7. Carefully open one packet and pierce potatoes with a fork to check tenderness and ensure chicken is fully cooked.
