A quick and delicious homemade dinner featuring crispy Trader Joe’s orange chicken combined with savory fried rice, perfect for busy weeknights or casual gatherings.

  • 1 package (about 16 oz) Trader Joe’s Orange Chicken, cooked according to package instructions
  • 3 cups cooked jasmine rice (preferably day-old)
  • 2 tablespoons vegetable oil (grapeseed oil recommended)
  • 2 large eggs, beaten
  • 3 stalks green onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 teaspoon sesame oil
  • 1 cup frozen peas and carrots, thawed
  • Freshly ground black pepper, to taste (optional)

Instructions

  1. Cook the Trader Joe’s Orange Chicken according to package instructions, usually baking or air frying for 15-20 minutes until crispy.
  2. Heat 2 tablespoons vegetable oil in a large nonstick skillet or wok over medium-high heat. Add beaten eggs and let sit undisturbed for 20 seconds, then scramble gently until just cooked. Remove eggs and set aside.
  3. In the same pan, add more oil if needed. Sauté minced garlic for about 30 seconds until fragrant. Add green onions (reserve some for garnish) and thawed peas and carrots. Stir-fry for 2-3 minutes until heated through.
  4. Break up any clumps of day-old jasmine rice and add to the pan. Stir-fry, pressing rice down and letting it sit briefly to develop slight crispiness, for about 5-6 minutes until hot and beginning to brown.
  5. Pour in soy sauce evenly over the rice and mix well. Add scrambled eggs back into the pan and fold gently. Drizzle sesame oil on top.
  6. Chop or break the crispy orange chicken into bite-sized pieces and fold into the fried rice. Toss gently for 1-2 minutes to combine without making chicken soggy.
  7. Taste and adjust seasoning with black pepper or extra soy sauce if needed. Garnish with reserved green onions before serving.

Notes

Use day-old rice for best texture to avoid mushy fried rice. Cook orange chicken separately to keep it crispy before folding into rice. Avoid overcrowding the pan to maintain crispiness. Reheat leftovers in a skillet with a splash of oil to revive texture; avoid microwaving.
