- 4 cups mini marshmallows (about 10 ounces)
- 6 cups Lucky Charms cereal
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Lightly grease a 9×13-inch baking pan with non-stick spray or line it with parchment paper, leaving some overhang on the sides for easy removal. Set aside.
- Place 3 tablespoons of unsalted butter in a large saucepan over low heat. Let it melt slowly, stirring occasionally (about 2-3 minutes).
- Add 4 cups of mini marshmallows to the melted butter. Stir gently and continuously over low heat until marshmallows are mostly melted but still a little lumpy (5-7 minutes).
- Stir in 1 teaspoon vanilla extract and a pinch of salt.
- Remove the pan from heat and immediately fold in 6 cups of Lucky Charms cereal, mixing gently to coat the cereal evenly without crushing it.
- Pour the mixture into the prepared baking pan. Using parchment paper or a lightly buttered spatula, press the mixture firmly and evenly into the pan without pressing too hard.
- Allow the bars to cool and set at room temperature for at least 30 minutes. Optionally, chill in the fridge for 10-15 minutes to speed up setting.
- Lift the slab out using the parchment overhang and cut into bars or squares with a sharp knife. Store leftovers in an airtight container at room temperature for up to 3 days.
Notes
Use low heat to melt marshmallows and butter slowly to avoid scorching. Press bars firmly but not too hard to keep chewy texture. Mini marshmallows melt best; chop large marshmallows if needed. For gluten-free, use gluten-free Lucky Charms and marshmallows. Vegan options available by substituting butter and marshmallows.
